A delightful take on the traditional Yorkshire style, this cheese pairs the gently crumbly, creamy body of Wensleydale with vivid, juicy sweet-dried cranberries. Crafted by Carron Lodge at their farm-based dairy in Inglewhite, Lancashire, the blend brings texture, colour and flavour in perfect harmony.


Flavour Profile

  • Smooth, mild creaminess of young Wensleydale with a light salinity.

  • Lively bursts of sweet-tart cranberry throughout the paste, offering fruity contrast. A fresh, lightly crumbly body that melts gently on the palate, with lingering fruity sweetness.


Tasting Notes

On tasting, expect a gentle creamy base from the Wensleydale, followed by the popping of sweet dried cranberries giving bright glints of fruity tang and sugar. The texture is delectably crumbly yet smooth, with a refreshing finish that makes it an approachable yet distinctive choice.

Made with pasteurised cow’s milk (from Carron Lodge’s farm in Inglewhite, Lancashire). 


Heritage & Herd

Carron Lodge operate from Park Head Farm, Preston, Lancashire — over 400 Holstein-Friesian cows supply milk for more than 40 handcrafted cheeses. Their Wensleydale & Cranberry showcases their flair for combining artisan style with playful, flavour-rich additions.


Maturation

Young, fresh Wensleydale style — this cheese is typically sold at a relatively early stage (weeks rather than months of aging) to retain the creamy, moist crumb and allow the cranberry sweetness to shine. 


Presentation

  • Available in blocks or half-wheels (e.g., ~1.1 kg half-wheel) with visible speckling of cranberries. 

  • Paste is pale cream, cranberries add intense red flecks; rind minimal or natural.

  • Ideal for cheeseboards, gifting or cutting into colourful blocks.


Shelf Life & Serving

  • Store refrigerated.

  • Best served at room temperature (~15-18 °C) for optimum flavour and texture.

  • Once cut, wrap well and consume within several days for freshest cranberry pop and crumb texture.
